This is our favourite Christmas Cake recipe, it is so simple, that my kids have been making it since they were toddlers. You can easily adapt the recipe to suit your taste and needs, but this cake is so moist and tasty, it requires hardly anything else.
All you need:
1kg Mixed Dried Fruit
2 Cups (500ml) Good Quality Orange Juice
1tsp Mixed Spice
1/2 tsp Cinnamon
30ml Rum (optional!!)
2 Cups Gluten Free Self-raising Flour (or 2 Cups Standard GF Flour and 2tsp Baking Powder)
1) Place the mixed fruit and spices (and rum if using) into a large bowl. Top with the Orange juice and mix to combine. Cover and let it stand for at least 8 hours (overnight is good, a whole day is better)
2) Mix in the flour. Put mix into a lined 24cm cake tin and bake at 180°C for 1hour and 20 minutes. Reduce the heat to 160°C and bake for 30 minutes. Let the cake cool in tin for 30 minutes before putting it onto a cooling rack
3) Decorate to your liking. This cake keeps well for a very long time as it contains no egg and dairy.
